Lamb Neck Pot Roast
Ingredients:
- Whatever size lamb neck
- sweet potatoes, chopped
- carrots, chopped
- garlic
- rosemary
- red wine
- onions (I used the green onions I had)
Instructions:
- Coat the lamb neck in a little flour (I used coconut flour) and brown it on all sides
- Sautee the garlic, onions, and rosemary in a little oil
- Throw everything in an oven-safe pot with however much wine and other liquid (broth/water); enough to cover most of the contents
- Place in an oven at 350 until the meat is tender (it took me about 3 hours)
